We’ve sat down with owner Aaron Lynch and manager Amber Pelesky to uncover the hidden gems Hidden Julles Cafe has to offer Haymarket. What makes them different? Local. Organic. Natural.

They strive to keep everything local, and what they can’t keep local, they keep organic, and they constantly aim for as natural as possible – no nitrates, minimally processed. Goodness, even their tortilla shells are homemade! You can see the Tumeric in their habanero Tumeric wrap – talk about farm to table.

Hidden Julles is as focused on their customers as they are on their menu. Their menu continues to morphe as their client’s needs, wants, and desires change. For example, literally, everything on their menu can now be made gluten-free.

Where’d the name come from? Born from tragedy, Hidden Julles Cafe was named after Aaron’s mother who passed shortly after their first location opened. The name keeps them grounded constantly bringing in “what mom would want” into their cafe.
